The Third Thankful Tuesday.

I don’t have much to say today.

Life is good, school is good, figuring out the future is stressful.

In all of the little problems, I’m reminded of my senior quote from high school:

“Never be afraid to trust an unknown future to a known God.” -Corrie Ten Boom

It’s still so true. & if Mercer had yearbooks, I would use it again.

Thankful Thursday List #3:

45. I’m thankful for being able to tutor some pretty darn cute kids downtown every week. I mean, look at this face:

46. I’m thankful for being able to try new things like Indian food.

47. I’m thankful for people who plan ahead.

48. I’m thankful for the fact that my roommate got into medical school! For real! You guys, she is so awesome.

49. I’m thankful for a mom who calms me down when I’m freaking out for no real reason.

50. I’m thankful that I have had so many of the same sweet friends since freshman year. They’re so special to me.

51. I’m thankful for hilarious mistakes like the lady at the Walmart bakery spelling congratulations wrong. Congrads!

52. I’m thankful that it’s time for candy pumpkins to be out! Mmmm.

53. I’m thankful for a cappella groups. Especially ones who do awesome stuff like this. This might be because I’m in love with the bassist  Or because I wish I could sing like that. You know, whatever.

54. I’m thankful for a sweet friend who lets me visit her and sleep on her bedroom floor for two nights.

55. I’m thankful for Pinterest ideas.

56. I’m thankful for ice cream. Especially that of the homemade peanut butter variety.

57. I’m thankful for productive Sundays that (hopefully) make the following week less stressful.

58. I’m thankful for when professors give curves on exams that I already did well on.

59. I’m thankful for getting to babysit my two favorite littles.

60. I’m thankful that we are finally to the point where we have zero cupcakes in our house.

61. I’m thankful for classmates who aren’t obligated to be helpful but help anyways.

62. I’m thankful for my Erin Condren life planner every single day.

63. I’m thankful for a current lack of drama in my life.

64. I’m thankful for the new season of New Girl. So awkward, so hilarious.

65. I’m thankful for nights when I can go to sleep early.

…& tonight just might be one of those nights.


My Pinericus Weekend.

I had a very pinericus weekend. I made that word up. It’s a combination of the two things that describe my weekend the most. I spent the weekend in the fabulous town of Americus, Georgia visiting my friend Cami, and while I was there we did several things off of Pinterest.

My first visit to Americus was pretty exciting. Not only did I get to hang out with Cami, but I got to see the sights.

I was given a tour of downtown Americus, Georgia Southwestern State University, and Plains, Georgia where I had some fabulous homemade peanut butter ice cream. So, so good.

The best part was hanging out with this giant, eyeless peanut. It was pretty exciting.

Anyways, while I was there we tried a few ideas that we found on Pinterest.

First, we made some pretty awesome cupcakes. (Don’t worry, we only made 24. The 108 last weekend was a one time thing.)

We tried this method of making a box cake taste like it’s from a bakery. I mean, I don’t necessarily know specifically what a bakery cupcake tastes like, but ours came out pretty tasty, so I’d say this one was a success!

The icing for the cupcakes was what I was most excited for. We made sculptable buttercream, and it was awesome. It was like a weird mixture between play-dough and icing, and it was so much fun.

Of course I made a cupcake with my trademark bow on it.

& then we had a whole lot of fun making a bunch of different designs.

I’m a big fan. I will definitely be doing this again. So much yummier than fondant.

The third Pinterest idea that I tried was a detox bath.  I don’t really know why I wanted to try this so bad, but for some reason I did. I think the idea of a bath making you sweat abnormal amounts really intrigued me, so we got the weird ingredients for it and gave it a go.

I don’t really know what I was expecting, but it didn’t exactly live up to my expectations.

First of all, the ginger turned the bath water brown. Which was nasty. I was not a fan of the colored bath water.

Secondly, I did sweat, but not as much as the article made it sound like I would. I could feel droplets dripping down my forehead though, so I guess it was a good amount.

& thirdly, the weirdest part is that my heart started beating really fast. I didn’t like that at all.

After I got out of the bath I didn’t feel detoxified, or really different in any way. I just felt hot, so I took a cool shower to wash all the sweat and ground ginger off of my body. Nasty, I know.

Maybe I don’t have many toxins in my body. Maybe this bath is a scam. Maybe I should know these things since I’m a biology major. Who knows.

I do know that it was a weird experience, but also a really funny experience. However, I don’t think I’ll be trying it again.

Overall, it was a fantastic weekend. Americus impressed me and so did Pinterest. This kind of weekend might need to happen again.

108 Cupcakes.

It all started with me saying that I wanted to make cupcakes.

& with my roommates encouraging me to make them. But I said, “No, I’m not going to make them if I don’t have a reason.”

Well, last Friday, I got a reason.

It was my friend, Amanda‘s birthday! So, naturally, I offered to make some cupcakes for her birthday gathering on Saturday. She asked for strawberry.

Any normal person would have bought ingredients for strawberry cupcakes, made a batch of 18, and been done with it.

Not me. I may be slightly insane.

Instead of just buying ingredients for strawberry cupcakes, I bought ingredients for 5 kinds of cupcakes.

I’m pretty sure you don’t understand how crazy this truly was.

I made cupcake batters, 5 icings, and fillings.

Ya’ll, I bought (and used) 4 pounds of butter.

Just call me Paula Deen. I don’t know what I was thinking.

I started baking around 7 pm. My roommates aided me in my insanity, and we still didn’t finish until about 1 am. It took SO LONG.

However, at 1 am, this is what we had:

One hundred and eight cupcakes. They completely covered our table.

There are only 3 people in our house. If we had eaten them all, that would have been 36 cupcakes each (and probably about 8 pounds gained each). No way.

So we took them to Amanda’s party. I took them to class. I took them to BCM lunch on Wednesday. & we have been eating them for breakfast, lunch, dinner, and dessert.

It’s been a week. We have 20 left. Not too shabby, if I do say so myself.

…or absolutely terrible. Depends on which way you look at it.

Anyways, this is what I have learned::

  1. Do not make five batches of cupcakes in one night unless you are preparing for Cupcake Wars on the Food Network.
  2. Cupcakes are relatively easy to give away, but 108 is still a big number.
  3. I’m pretty darn good at making cupcakes.
  4. My roommates and I are pretty darn good at eating cupcakes.
  5. My roommates will not stop me from doing crazy things. They may even help.

But, overall, it was fun. & I’m pretty sure that it was a night we’ll be remembering for a while. Which is definitely good.  I only have a few more months to live with these wonderful people, and I’m all about making some memories.

& if anyone wants a week old cupcake or two (that are still pretty tasty) let me know.  They’re not going to last much longer.

You’ve Got to Get Up Every Morning With a Smile on Your Face.

Whoa. School life has been crazy lately. Like 4 tests in five days crazy with 3 of those being in a 24 hour period.

But now- it’s good. I’m more caught up than I have been in a while.

Thankful Tuesday, Take 2:

22. I’m thankful that it’s actually starting to feel like fall in the mornings, even if the highs are still in the 80’s.

23. I’m thankful that I can walk to school in the mornings.  Ten minutes to clear my head and destress before starting the day can be a wonderful thing.

24. I’m thankful for friends who turn awkward situations into non-awkward situations.

25. I’m thankful for long naps when the house is quiet and I don’t have enough homework to feel (too) guilty about it.

26. I’m thankful for roommates who cook for me. Especially when said dinners are so exciting that picture messages are sent to parents.  In this house, a roast is a milestone.

27. I’m thankful for bible studies that are real. Ones that include honesty, lots of Jesus, and occasionally just getting off topic to laugh and share.

28. I’m thankful for my roommate folding my clean laundry while I’m not home.

29. I’m thankful that nobody noticed when I threw up on the side of the road while walking to school.

30. I’m thankful for the opportunity to worship with so many of my friends on Thursday nights.  Always good.

31. I’m thankful that I have all the skin on all my fingers (unlike a lady I met at the OT office).

32. I’m thankful for pandora.

33. I’m thankful for productive meetings.

34. I’m oh so very thankful for weekends.

35. I’m thankful that even though I don’t have TV, I can still watch Project Runway online.

36. I’m thankful for roommates who encourage me to do ridiculous things sometimes.

37. I’m thankful for The Lizzie McGuire Movie which we watched at our house on Friday Night.  You’re never too old for that movie. & when Lizzie and Gordo finally kiss, and then he says “thank you”? Bahaha. Best thing ever.

38. I’m thankful that crazy test weeks aren’t every week.

39. I’m thankful for cupcakes. (Even though I have consumed way too many of them in the past few days.)

40. I’m thankful for my electric blanket. So cozy!

41. I’m thankful for my dog’s pregnancy!! The puppies will be here so soon, and it will probably qualify as one of the best days of my life. Not even kidding.

42. I’m thankful for the wonderful music maker that is Hunter Hayes. This song makes me giggle.

43. I’m thankful for the game of Nertz.

44. I’m thankful for being able to watch How I Met Your Mother online. Twenty minute episodes are the perfect length to restore my sanity during study sessions.

…Or to watch when I’m caught up and slightly unmotivated. Might just go do that now…
